DRY BEEF CURRY

If I have some beef mince I make a "dry curry": fry up the mince, onion, carrot, and capsicum (all chopped super fine) and add the rice and flavour it with salt pepper and curry powder (I take kids portions out before I add extra curry powder for Sean and I). No egg in this one. If I have more time I sometimes make an omelette with this dry curry rice in it.
