2-MIN NOODLES WITH EGG AND BOK CHOY

In a fry pan bring 2 cups of water to the boil. 
Break 4 whole eggs in and poach until almost cooked through. 
Spoon them out and place them in the bowls that noodles will be served in.
Open 2 x 2-min noodle packets and place in the water. Do not add any of the sachets as they contain MSG!
Cook for 1 minute. Then add chopped bok choy and a handful of peas. If you have spare leftover meat/chicken etc, you can add some of this (chopped small). Then add some seasoning (either salt/pepper) we use the Herbamare Green Salt. I also add a little bit of sesame oil for flavour. If you don’t have this, a knob of butter is just as good.
Stir it all in and if you don’t like your 2-min noodles juicy, drain off the liquid and serve. Place the poached eggs on top and enjoy. Sometimes I splash a little soy sauce on top too! 
If you want to make it look a little fancy, sprinkle some fried shallots on top (you can get tubs of these at the Asian grocers).
