ZUCCHINI SLICE

Ingredients:
1 cup grated zucchini
1/2 cup corn
1/2 cup grated carrot
1 onion
Thyme
Parsley
1 cup cheese
1/3 cup mustard seed oil (or olive oil)
3 eggs
1 cup self raising flour

Just mix it all together, then pour into a rectangular or square tin. Bake for 45 min.

I bake it around 180 c and sometimes it takes up to 1 hr til the middle is cooked. I find a round dish helps the middle cook better if you have one that is deep enough to fit the mixture.
